Oolan Recipe/ Kerala style Oolan recipe/Onam Sadhya Recipe

Oolan is a traditional, very light and subtle_flavoured dish. This is similar to stew, made with ash_gourd, pumpkin and black pea.





Ingredients


Ash gourd  _   2 cups
Black pea  _  3/4 cup(soaked for 2-3 hours)
Green Chilly _  2-3( slit )
Coconut Milk ( thin) _  1 cup
Coconut Milk (thick)  _  1/2 cup
Coconut oil  _  1 tbsp
Curry leaves  _  few
Salt  _  as needed

* You can cook Oolan with both pumpkin and Ash gourd with black pea.
* Cut ash gourd into thin cubes .
1. Cook black pea in a pressure cooker adding salt  for 1 or 2 whistle.


2.Allow excess water to evaporate (so as to maintain the consistency while adding coconut milk)
   Add chopped vegetables, green chilly with thin coconut milk to the pea .Give one whistle .


3.Finally add thick coconut milk with curry leaves keeping in low flame and mix.


4.Switch off the gas stove and finally add coconut oil.
