Avial is a dish made with mixed vegetables with coconut and coconut oil. This dish is an essential for Kerala Sadhya .

  • You can cook Avial either ,adding raw mangoes or curd , it can be even substituted with tamarind pulp too.
  • Add just the minimum quantity of water for the vegetables to get cooked ,as it is a semi _gravy dish.
  • More water will increase the consistency of gravy and spoil the dish.
  • Vegetables should not be over cooked properly ,but should not get mashed too .
  • Add mango ,only after the vegetables are cooked properly .
  • Some time whole jeera might not grind properly with coconut,as ingredients should be coarsely grinder .So first powder jeera in a small grinding stone, and then grind along with coconut .
  • Do not boil or keep in high flame after adding coconut paste.
  • Lower the flame to minimum and then add coconut paste , and oil.
  • Increase or reduce the quantity of mango ,depending on its tanginess.





Ingredients

Mixed Vegetables _ 2 1/2 cup
Raw mango  _  1/2 cup
Green Chilly  _ 2
Red Chilly Powder  _  1- 2 tsp
Turmeric Powder  _  1 tsp
Coconut Oil _  1 1/2 tbsp
Curry leaves  _  few
Salt _ as needed

Mixed vegetables needed
Raw Banana
Yam
Ash_gourd
Drum_stick
Snake_gourd
Beans
Carrot
* Take all the vegetables in almost equal quantity , so together 2 1/2 cup.
   Wash and cut length wise .No need to peel the skin of raw banana.

To Grind

Coconut ( grated)  _ 1 1/4 cup
Jeera /cumin  _  1 tbsp
Green Chilly  _  2-3



1 . In a heavy bottom pan , cook vegetables in medium flame closing the lid of the pan, ( excluding raw mango) adding 2 green chilies slit, turmeric powder, red chilly powder ,salt and1/2 tbsp oil .
 *Just sprinkle some water for the vegetables to get cooked ,as this is a semi dry dish .


2. Add raw mango , medium flame let mangoes get cooked.


3. Grind coconut ,jeera ,and green chilly.
    Some time whole jeera might not grind properly with coconut,as ingredients should be coarsely   grinder .So first powder jeera in a small grinding stone, and then grind along with coconut .






4.Add the coconut mixture to the vegetables and mix well.Keep in low flame for a minute .



5.Finally add curry leaves and coconut oil.
