Ishtu / Potato Stew Recipe /Onam Sadhya Recipe


Kerala style stew is a dish made with vegetables in coconut milk , garnished with coconut oil and curry leaves. For sadhya / feast ,we usually make stew only with potato. A simple and easy, but of course a rich dish.


Ingredients


Potato  _  3 medium sized( cut into cubes)
Green Chilly and ginger finely chopped  _    1 1/2 tbsp
Coconut Milk thick( 1st extract)   _ 1/2 cup
Coconut Milk thin( 2nd extract)  _ 1 cup
Curry leaves _ few
Coconut Oil _ 2 tsp
Salt _ as needed.

* In this recipe I have cooked potatoes in thin coconut milk  which makes the dish tastier and rich.You can cook by adding water ,and finally adding thick milk alone .
* You can pressure cook ginger garlic with potatoes too.
*Switch off the gas and add coconut oil this will give a tempting aroma to the dish.


 1. In a pressure cooker add potatoes with salt and thin coconut milk(2nd extract) .Cook potatoes for 1 or 2 whistle .
2. Mean while in a small frying pan heat oil ,add ginger and green chilly.In medium flame fry .

 3.Once the cooker cools down lightly mash potatoes and add fried ginger and green chillies with thick coconut milk.Switch the gas in low flame and cook for few seconds( do not boil) and remove the pressure cooker.


 4. Finally add coconut oil mix well .
