Kootu curry is my favourite of all the dishes prepared for sadhya .Kootu curry is prepared in different style in different parts of Kerala.This recipe is my mom's version. The dish is spicy and sweet as well ,fried coconut adds richness to it.

Serves : 4
- This is a semi dry dish .
- Chop the vegetables into small cubes.
Kabuli Chana/Black chickpea : 1 cup
Mixed Vegetable(cut into small cubes) _ 1 1/2 to 2 cup
(Yam,Raw banana,Snake gourd,White pumpkin)
Pepper powder _ 1 tsp
Coriander powder _ 1 tsp
Hing _ 1/2 tsp
Turmeric powder _ 1 tsp
Chilly powder _ 1 tsp
Jaggery _ 1/2 to 3/4 tbsp
Salt _ as needed
For Seasoning
Coconut oil _ 2 tsp
Coconut (grated) _ 1 1/2 cup
Cumin/Jeera(powder) _ 1 tbsp
Mustard _ 1 tsp
Red Chilly _ 2
Curry leaves _ few
1.Cook chana in a pressure cooker with salt ,turmeric powder, red chilly powder.
2. Once the Chana is cooked add the vegetables and pressure cook for 1 whistle.
3.Now add pepper powder ,coriander powder and hing to the cooked vegetables and cook for 8-10 min in low flame.
4.Add 1/2 to 3/4 tbsp(adjust according to taste) jaggery .
4.Heat coconut oil in a small kadai ,add mustard .Once it splutter add red chillies and grated coconut .
5.Fry the coconut till it turns brown in medium flame .(keep stirring) When the coconut is almost 3/4th done add jeera/cumin powder and curry leaves to it . Once done add to the vegetables .Mix well .
6.Serve hot with rice.
