Penne Pasta with Grilled Tomatoes Recipe

Serves  :4



Penne pasta (cooked as per instruction) _   2 cups
Tomatoes  _ 6 Nos
Mixed Vegetables  _ 1.5 cup
(Mushrooms, Zucchini, Bell Pepper,Broccoli,)
Garlic  _ 1 tbsp
Parmesan Cheese _  4 tbsp
Italian Herbs  _ 1 tbsp
Red Chilly Flakes _  3 tsp
Olive oil _  2 tbsp
Salt to taste.

* Vegetables should be crunchy and not over cooked.






Boil Pasta as per instructions given on the packet and keep aside .Meanwhile grill tomatoes

 at 180Âșc for about 20 to 25 min and peel the skin.



Heat a pan add olive oil crushed garlic ,red chilly flakes .Saute for a while in medium heat and add chopped vegetables.

Fry for a while until vegetables are cooked ,then add roasted tomatoes .Mix well .

 Add cooked pasta ,Italian herbs ,salt and mix well.

Serve hot with grated Parmesan cheese.
