Sambar Recipe/South Indian Sambar Recipe

Ingredients

Tur Dal  _  1/2 cup 
Vegetables
           Drum stick  _ 2
           Ladies finger _ 3 nos
           Pumpkin _  small piece
           Tomatoes  _ 1 medium
          Green Chillies  _ 2 to 3 nos
          ( You can include your choice of vegetables like potato, onion, colocasia (arbi) )
Sambar Powder   _ 1tbsp
Hing  _ 1/4 tsp
Turmeric powder  _ 1/2 tsp
Chilly powder_  1/2 to 1 tsp
Tamarind  _  a small size ( according to taste)
Mustard  _ 1/2 tsp
Red chilly  _ 2_3 
Curry leaves. _ 4_5 leaves 
Salt.   _  as per taste
Oil   _  1/2 tbsp



1. Chop vegetables and soak tamarind in some water and keep aside .Dry roast the ingredients for sambar masala at low flame for 5 minutes and once its cool in a mixer grind to fine powder and keep aside.
In  a pressure cooker wash tur dal and pressure cook for 3- 4 whistle, adding hing to it .This gives a nice aroma to your sambar.


2. Once the dal is cooked add chopped vegetable { drumstick, pumpkin and green chillies only }
     with turmeric powder, chilly powder, salt and cook in the pressure cooker for 1 whistle.

    Meanwhile in a small non_ stick kadai heat 1/4 tsp of oil add ladies finger and saute it .



3.  When the pressure cooker cools down add ladies finger ,tomatoes and boil for a while ( or till   tomatoes are cooked) .Add salt as per taste if needed.
    Note: the vegetable should not be over cooked.


4. Now add tamarind juice extract from the soaked tamarind. Let it boil for a minute and add sambar powder.





5.  You can add grated jaggery to sambar to adjust the tanginess if needed.

Finally in a small seasoning pan heat oil add mustard ,when it sizzles add red chillies and curry leaves.Garnish by adding chopped coriander leaves.






6.Serve hot with dosas and idlis .
