Vegetable Pulao Recipe

Ingredients

Rice _ 2 cup
Onion _ 1 medium Size
Mixed Vegetables _ 3/4 cup
(Carrot ,beans, peas,cauliflower)
Coriander Leaves (chopped) _ 2 tbsp
Cashew nuts and raisins _ 2 tbsp
Ghee _ 1/2 tsp
Biriyani Masala(optional) _ 1tsp

To Temper

Bay Leaves _ 1
Jeera _ 1 tsp
Ghee _ 1 tbsp

To Grind


Cloves _ 2
Cumin _ 11/2 tsp
cardamom _ 1
Star anise _ 1
Garlic _ 4-5 pods
Green Chilly _ 2-3

1. Wash and soak rice for 1/2 hour.

2. Chop onion and vegetables ,keep aside .Grind the ingredients under 'to grind'.
3. In a pressure cooker heat ghee ,temper jeera and bay leaves . Now add onion and fry for 2 minute. Add vegetables and salt .
5. Add the ground paste and mix well .

6. Add rice with 4 cup of water, mix well and pressure cook for 1 whistle.

7. Allow the cooker to cool down. In a small frying pan heat 1 tsp ghee and fry cashew nuts. Swith off the flame and add raisins. Add to the rice .Garnish with coriander leaves and serve hot.
