Lemon rice is a common South Indian rice item. An easy lunch box option. I usually prepare such easy rice items on week ends when I feel lazy to cook full meal.Once the rice is cooked, it takes only 10 mins to prepare lemon rice.
Temper mustard, urad dal, channa dal, peanuts, red chillies, green chillies, hing, curry leaves add lemon juice and mix cooked rice.

*Lemon rice can be made from left over rice too.
*You can add peanuts also while tempering.

Ingredients
Cooked Rice _ 3 cup
Lemon _ 2-3
Turmeric _ 1/2 tsp
Salt _ as needed
To Temper
Oil _ 1 tbsp
Mustard _1 tsp
Urad dal _ 1 tsp
Channa dal _ 1 tbsp
Dry Red chilly_ 3
Green chilly _ 4
Asafoetida/Hing _ 1/8 tsp
Curry leaves _ few
1.Cook rice and keep aside. .Squeeze lemon and collect the juice.
2.Heat a broad pan with oil, add mustard, once spluttered, add urad dal, channa dal, and red chilli. . Then add green chillies, curry leaves and hing, give a quick stir.
Now add cooked rice and mix well. Adjust salt to taste.
