Weekends means its pasta by default at our home. Every one loves pasta, so thought of tying a different recipe this week.this walnut pesto pasta is quick and easy to make and very tasty too.

*You can use pasta of your choice.
*Fry vegetables till cooked, but should not be over cooked .It should be crunchy.
*You can replace tomatoes with 12 -14 cherry tomatoes.

Ingredients
Macaroni Pasta _ 1 cup
Mixed Vegetables _ 1 cup
(Broccoli, Zucchini, Bell pepper, Mushrooms)
Salt _ as needed
Olive oil _ as needed
Parmesan cheese _ 4 tbsp
Oregano _ 2 tsp
Chilly Flakes _ 2 tsp
Olives _ few
To Grind
Tomato _ 3 (big)
Walnut Kernels _ 8- 10
Garlic _ 4-5 pods
Olive oil _ 1 tsp
1. Cook pasta as per instructions drain and keep aside.
2.In a frying pan saute tomatoes till smooth allow it to cool down. In a mixer grind to a smooth paste ingredients under " to grind".
3.In a heavy bottom pan add oil and saute vegetables. Let it get cooked.Not add the pesto paste and mix well, cook for a while .Add olives .
4.Now add the cooked pasta, oregano,chilly flakes, salt and garnish with grated cheese.
